tomcollins.jpgThe Tom Collins recipe first appeared in print in 1876. It was created by Jerry Thomas, the “father of American mixology,” and famed author of The Bartender’s Guide.

Tom Collins

2 ounces gin
1 ounce lemon juice
1 teaspoon of sugar
3 ounces club soda
1 maraschino cherry
1 lemon or orange slice

Build cocktail in a collins glass. Add gin, lemon and sugar, then stir to combine. Add ice, top with club soda and garnish with a cherry and orange slice.
