suntory whisky tokiWe’ve been entangled in a pretty serious love affair with Japanese whisky for many years. And just when things start to look stagnant, and we consider moving on in search of some other exciting elixir, we’re met with something new. In this case, that something is Suntory Whisky Toki, the latest expression from the House of Suntory, and one that’s a blend of whiskies pulled from the company’s three distilleries: Hakushu, Yamazaki and Chita.

Suntory Whisky Toki pours very light, clear gold in the glass. And on the nose, it skips any smoke or heavy oak notes, instead opting for lots of fresh apple, honey, herbs and mint. The palate offers much of the same, but adds some citrus, cereal grains and subtle sweetness. It all finishes smooth and easy, with notes of vanilla and mild spice.

Suntory Whisky Toki is light, but it offers plenty of flavor to stand on its own. It’s highly mixable, too, which makes it a perfect candidate for the classic Japanese Highball–a simple two-part cocktail composed of whisky and sparkling water. Serve it tall with ice, and you’ll be thinking summery thoughts even as the weather turns cold.
