Belle Epoque

The Belle Epoque cocktail hails from Restaurant R’evolution in New Orleans. It includes a unique ingredient — ratafia — which is an infusion of a base spirit (typically brandy) with fruit. R’evolution is currently infusing persimmon with brandy, but other fruits are used seasonally. After sitting for about six months, simple syrup is added to achieve the desired sweetness level, and the fruit is strained out.

Belle Epoque
  1. Combine bourbon, lemon juice, ratafia and simple syrup in a shaker.
  2. Shake with ice, then strain into a chilled cocktail glass or Champagne flute
  3. Top with sparkling wine and garnish with a lemon peel.
