pama and rum cocktailFor the past couple months we’ve been playing with PAMA Pomegranate Liqueur. Tasting it, mixing with it and generally exploring its all-natural pomegranate juice-vodka-tequila profile. At a modest 17% ABV, it’s a solid stand-in for vermouth and grenadine in cocktails. Its structured tannins make it play a bit more boozy than it really is. And its sweet/tart flavor allows it to work in a variety of drinks, spanning spirit categories from bright and clear to rich and oaky.

Of late, we’ve been using it with rum. First in a handful of white rum drinks (it’s a natural addition to mojitos and daiquiris). And then in dark rum drinks. For the latest, we stayed within the daiquiri family and created this rich and flavorful, yet easy-drinking cocktail.

Trinidad Summer

2 oz dark rum
1 oz PAMA
.5 oz fresh lime juice
.5 oz Falernum

Shake all ingredients with ice, then strain into a cocktail glass. Garnish with a twist of lime peel.

We used Plantation Original Dark Rum to good effect, but any dark, flavorful rum should do the trick. The result is rich and more complex than the simple recipe would indicate. But the tart pomegranate and lime keep things in check, making the overall package very quaffable.
