Hey, it’s Earth Day. So let’s treat our planet kindly and also drink some cocktails, because the two activities aren’t mutually exclusive. Especially these days, as more and more distillers produce organic spirits and engage in sustainable practices. Sometimes it’s a marketing gimmick, but then you find the guys that really embrace it. Pisco Portón is one of those brands. From Master Distiller and pisco expert Johnny Schuler:

“It all starts with the grapes… Only the best, hand selected estate grown grapes are used to make Pisco Portón with the utmost attention to preserving the natural resources at hand. Water is scarce in Ica, which is by nature a very dry region where it hardly ever rains. We reuse water from the distillation process for drip irrigation, and we also reuse pruning clippings to add organic nutrients to the soil around the vineyards. Our gravity-fed distillation ensures a gentle distillation process that allows the flavors of the grapes to be fully revealed.”

So here are a couple Pisco Portón cocktails to celebrate Earth Day.

TIERRA D’ORO (pictured)

1.5 oz Pisco Portón
1 oz Yellow Chartreuse
Soda

Add Pisco Portón and Yellow Chartreuse to an ice filled tall glass. Top with soda and gently stir. Line the rim of the glass with sugar, if desired. Garnish with a lemon twist or a mint sprig.

CUCUMBER COLLINS

1.5 oz Pisco Portón
.5 oz fresh lemon juice
.5 oz fresh lime juice
.5 oz simple syrup
2 oz club soda
2 cucumber slices

Muddle cucumber with simple syrup. Combine ingredients (except for club soda) into a shaker. Fill shaker 3/4 full of ice and shake vigorously. Strain into a glass with fresh ice and top with club soda. Garnish with a cucumber or lemon slice.
