An easy-drinking classic, the Bee’s Knees is a simple three part cocktail that combines gin, lemon and honey. It’s a product of the Prohibition era, when bathtub gin needed a good dose of citrus and sugar to be palatable. Back then, the recipe was closer to equal parts, but this updated version will serve you right. It’s got a winning combination of bracing gin, tartness and sweetness, and it makes for a refreshing drink all year round. We like a classic London Dry style of gin in our Bee’s Knees, but feel free to experiment, as more floral gins can also be interesting.
2 oz gin
.5 oz honey
Shake all ingredients with ice, and strain into a coupe. Garnish with a lemon peel.
