There’s a new vodka in town. It’s called Zodiac, and it’s distilled from potatoes at the brand’s Rigby, Idaho distillery. It’s then blended with water from the Snake River Aquifer, which runs beneath the distillery, and it’s filtered through Canadian birch charcoal. All that creates a clean tasting and naturally sweet vodka.

For now, Zodiac is only available in Texas, but they’ll be expanding distribution to other states early next year. They will also introduce a potato-based Black Cherry flavored vodka in the next few months. In the meantime, we’ve got a couple Zodiac-based vodka cocktails from Brian McCullough, barkeep at the Standard Pour in Dallas.

Golden Girl (pictured)

2 oz Zodiac Vodka
1 oz honey syrup
1.5 oz pineapple juice
.75 oz lemon juice
1 Dash Angostura Bitters

Combine all ingredients, shake and strain into tall Collins glass. Add ice and garnish with a lemon wheel and pineapple wedge.

Star Eyed Julep

2 oz Zodiac Vodka
.75 oz Orgeat
.75 oz lime juice
1 small spoonful of powdered sugar
5-6 mint Leaves
1 mint sprig
Grated nutmeg

Lightly muddle mint leaves in julep cup. Add vodka, orgeat, lime juice and powdered sugar, and fill the cup halfway with ice. Stir ingredients until incorporated. Top with crushed ice, fresh grated nutmeg and a mint sprig.
