santera blanco tequilaSantera is a new tequila that’s distilled and bottled by Destilladora del Valle de Tequila Casa Maestri. The brand is producing a blanco, reposado and anejo from mature blue agave harvested in the northern highlands of Jalisco. The agave hearts are slow roasted to round out the flavors, and after distillation, the tequilas undergo a filtration process.

The unaged Santera Blanco pours crystal clear in the glass with aromas of vanilla bean, pepper and earthy minerals. Flavors are clean and rather mild, with notes of sweet vanilla and more pepper–this time red, green and vegetal in nature. It’s soft on the palate with a medium-length, smooth finish.

This is good, clean and simple tequila. There’s not a lot going on here, but it’s a nicely-distilled spirit that makes us eager to break open these bottles of reposado and anejo.
