The Pimm’s Cup is a classic, very easy-to-make cocktail that’s a popular summertime drink in England. The Pimm’s Cup base is Pimm’s No.1, a gin-based liqueur featuring quinine and a proprietary medley of herbs. From there, the drink differs nearly everywhere it’s consumed. Some add fresh lemon juice and ginger ale, while others use 7-UP and lemonade. Some insist that a single cucumber is the proper garnish, while others fill the glass with strawberries and citrus.
Any of the above methods can produce a tasty beverage, but we prefer to keep it simple. So don your Wimbledon whites and drink up.
2 oz Pimm’s No. 1
.5 oz fresh lemon juice
Add Pimm’s and lemon juice to a Collin’s glass. Fill with ice, then top with ginger ale. Garnish with a cucumber.
*For a spicier twist, sub the ginger ale for ginger beer and a touch of soda.
