Negroni Bianco

This continues Negroni Week, an annual celebration presented by Imbibe Magazine and Campari that champions this great cocktail while raising money for charitable causes around the world. We’ll be participating with a week of Negroni coverage.

 

Naren Young’s West Village bar and restaurant, Dante, serves up 12 varieties of the Negroni–from the classic three-part recipe to less-classic but still recognizable riffs on the original. One of our favorites is the Negroni Bianco. It skips Campari entirely, instead opting for two white vermouths and Quinquina. The result is bittersweet, floral and delicious, making for a fine aperitif. It goes like this:

NEGRONI BIANCO

1 oz Brooklyn gin
1/2 oz Martini & Rossi bianco vermouth
1/2 oz Noilly Prat dry vermouth
1 oz Quinquina aperitif
2 dashes lemon bitters
1 dash verjus

Stir with ice then strain into a Nick & Nora glass. Twist a lemon peel over the top and discard, then garnish with baby’s breath flowers.
