The Clover Club is a bar in Brooklyn, but before that, it was a pre-Prohibition cocktail. Well, it still is, actually, and you can find it on plenty of menus around the country. Because this easygoing mix of gin, lemon and raspberry syrup, all tied together with some egg white, tastes as good as it looks. Now, here’s how to make a Clover Club for yourself.
2 oz dry gin
.75 oz fresh lemon juice
.5 oz raspberry syrup
1 fresh egg white
Shake all ingredients without ice for 15 seconds. Add ice and shake again until cold. Strain into a chilled glass and garnish with raspberries.
