The Tom Collins recipe first appeared in print in 1876. It was created by Jerry Thomas, the “father of American mixology,” and famed author of The Bartender’s Guide.
Tom Collins
2 ounces gin
1 ounce lemon juice
1 teaspoon of sugar
3 ounces club soda
1 maraschino cherry
1 lemon or orange slice
In a shaker, add ice cubes, gin, lemon juice and sugar. Shake well. Strain into a collins glass filled with ice. Add club soda, stir and garnish with cherry and lemon or orange slice.
